Rolled meat with homemade tomato sauce

We share one of the winning recipes of #ConcursoDíadía de Leonor Bernal: Rolled meat with homemade tomato sauce.


For rolled meat:

  • 500 grams of ground beef,
  • 1/2 cup breadcrumbs, 2 eggs,
  • 3 crushed garlic cloves,
  • 1/2 diced onion,
  • 4 sweet peppers chopped into strips,
  •  salt and pepper to taste.

For the filling:

  • 4 eggs,
  • 2 small carrots,
  • 4 cups spinach

For the homemade tomato sauce:

  • 1 cup diced onion,
  • 1/2 cup finely sliced garlic
  • 1/2 cup finely chopped chives,
  • 4 crushed garlic cloves,
  • 10 very ripe diced tomatoes, diced,
  •  4 tablespoons oil,
  •  salt and pepper to taste.


  1. In a bowl, place the ground beef, eggs, breadcrumbs, chili pepper, onion, salt, pepper and garlic. It integrates everything for 5 minutes. Let stand in the fridge.
  2. Meanwhile, for the filling the eggs are cooked for 8 minutes, peeled and reserved.
  3. The carrots are peeled by cutting them into thin slices, bleached in boiling water and immediately placed in ice water, the same is done with spinach. Both vegetables are strained, drained with a strainer and we reserve.
  4. Cut a rectangle of aluminum foil, grease it with butter, spread the meat that was in the fridge, cover it with the carrot slices and place the spinach leaves on top of them.
  5. We place the eggs forming a line in the center and carefully roll up to form a roll that we will close like a big candy, folding the ends down.
  6. We place it on a baking sheet and take it to the oven for 40 minutes at 180 degrees.

For the sauce:

  1.  In a cauldron we fry the vegetables except the tomato that will be added after 8 minutes. Let simmer for 30 minutes, add salt and pepper.
  2. If we want we leave it that way or liquefy it. Cut the rolled into thick slices and cover with tomato sauce.
